Fine Sherry Tasting (Oxford)
We love high-quality Sherry here at the Wine School and are pleased to see that sales of premium Sherry are on the rise. Our tasting is hosted by enthusiast Aled Thomas who will bring out the enormous diversity in Sherry, from the driest of dry Finos to the lusciously sweet PX Sherry.
What makes sherry unique is its ageing process: all Sherry is aged in cask and blended using a method known as the Solera system. This ensures that young and old wines are blended together to encourage freshness and complexity in every style. The style of Sherry is determined by the presence of oxygen or yeast during the ageing process: Fino sherry aged in contact with yeast cells known as flor is pale, dry, delicate; Oloroso is aged in contact with air and is dark brown, full-bodied, rich and nutty. And there are other styles which combine both of these methods.
The 2 hour tasting will include 6 different types of Sherry including a selection of the following:
